Josh’s Irish Tomato-Parmesan Potato Stew
A thick, rich vegetarian pressure-cooker stew with Yukon Gold potatoes, browned mushrooms, sweet leeks, bell peppers, tomato paste, 18% cream, and vegetarian parmesan-style cheese. It is designed to be saucy enough to spoon onto a plate beside spiced yam hash, but hearty enough to stand on its own.
